Over the years, this confectionary trophy has grown in importance since the main culinary competition and the desserts presented have been increasingly creative and innovative. Constance Hotels and Resorts is collaborating once again with Valrhona, the famous French premium chocolate brand. Thus, the participants are using the fnest cocoa in the world for their tasty creations, such as the new and exclusive Constance Dark Chocolate 68%, a unique and inimitable dark chocolate, which ensures an unrepeatable sensory and gustatory experience. The personalized chocolate is composed of 68% cocoa, which reveals intense fruity notes and spicy favors that awaken the taste buds of those who taste it. This chocolate refects Constance Hotels & Resorts True By Nature principles as it marries its exotic culinary philosophy, values ​and sustainable commitment. As competitors for the 2023 edition, s and the great masters of French haute patisserie were selected to work in collaboration with as many pastry chefs from six Constance properties, to create sweet and appetizing innovations: Jéremy Aspa (Pâtissier trainer at Ecole Valrhona) , Jérôme de Oliveira (Maison Jerome de Oliveira), Mathieu Kamm (Pâtisserie Kamm), Pascal Lac (Pâtisseries Lac), Sébastien Bouillet (Chocolatier Bouillet) and Cédric Pernot (Au Fidèle Berger).
