Pierre Hermé: “Creating emotions is our raison d’être” - Falstaff

Carrying out patisserie competitions under tropical conditions represents a major challenge . Hermé emphasizes: “The ingredients, the climate and the space, as there is often little space in the kitchens. It is really a challenge for the chocolate showpieces, and although the kitchens are air-conditioned, it requires a special adaptability to work in these conditions. What came out of it is extraordinary!” THE ROLE OF TASTE IN PATISSERIE IN THE DIGITAL AGE On competition day, the Constance candidates work without the hands of their renowned coaches. »We evaluate the artistic creation based on visual beauty, technical skill and care in presentation. When it comes to cakes, we evaluate the appearance, cut and taste. The taste makes up about two thirds of the fnal score ," explains Hermé, who along with the other jury members evaluated a total of twelve cakes and desserts that day, in addition to the chocolate art, which has not yet been tasted.

C'EST NOTRE RAISON D'ÊTRE 

With all the Instagram presence of the patisserie stars, taste is a topic that concerns the industry just as much as the importance of taste versus the art of plating in the gourmet restaurant sector. Hermé believes that the visuality of the pâtisserie makes it easier to present it to the public, but one should not confuse its purpose. »Pâtisserie is much more visual than cooking , often more photogenic than general cooking. Therefore, the patisserie on social media benefts from this visibility and this appeal. But the ultimate goal of patisserie always remains taste.«

Precision, competition and technical skill characterized the days in the patisserie and between the candidates - and paved the way for Pierre Hermé. And yet the ingredient “emotion” is crucial for him: “We always say that salt is for nourishment and sugar is for pleasure. In fact, our job is to create emotions for those who eat our cakes. This is our raison d'être . C’est notre raison d’être.”
