Benjamin Gallein, head chef at the “Votum” restaurant in Hanover, is embarking on a culinary expedition to Mauritius. At the “Constance Festival Culinaire” he doesn’t just have to face culinary challenges. A look behind the scenes.

We meet Benjamin Gallein in mid-March, at 28 degrees and 72% humidity . It's not exactly the typical climate for his regular place of work, the "Votum" restaurant in Hanover, which has been awarded two stars in the Michelin Guide . Our meeting point is the “Deer Hunter Restaurant” on the golf course of the Constance Hotel “ Belle Mare Plage ” in Mauritius . The “ Constance Festival Culinaire” is taking place here for the 17th time , a week full of culinary competitions, dinners and international exchanges between top chefs, highly decorated pastry chefs and journalists. In two days, around 60 guests will eat a 4-course menu from Gallein. The main components were specifed - but the composition and elaboration is up to the guest chefs. In addition to his dinner, he will also be a jury member in the culinary challenge evaluating his Hamburg chef colleague
