At the “Constance Festival Culinaire” the boundaries of taste are redefned. Jury member Fiona Beckett reveals what the top chefs have to pay attention to at the “Deutz Trophy” and why wine plays more than just an accompanying role.

Food and wine pairing is an art that few chefs have mastered to perfection. Even in wine accompaniments to upscale menus, you often experience at best good wines that do not torpedo the dish. Creating a real taste complement is the fne art of sensory and texture - and it involves more than just adding the appropriate wine to the food. MASTER OF TASTE HARMONY It is precisely this art that is the focus of one of the four culinary competitions at the “ Constance Festival Culinaire” . In the “Deutz Trophy ”, six participating top chefs had the task of pairing the William Deutz Millésime 2013 cuvée with a dish containing sea urchin . Apart from the basic ingredient and a time limit of 1.5 hours, the chefs were relatively free in their creation.
