Shelina Permalloo : ambassadrice émérite de la cuisine mauricienne - VoyA-G

Une pareille réussite nécessite évidemment un superpouvoir, celui de Shelina c’est la capacité de jongler entre plusieurs rôles et ambitions. « Je suis mère célibataire, businesswoman, écrivaine et chef, tout cela nécessite une planifcation assidue », souligne-t-elle. Shelina Permalloo: Ambassador Emeritus of MauritianCuisine

Some ambassadors do not work in the chancellery but are worthy representatives of the countries they claim to represent. Shelina Permalloo, a British chef of Mauritian origin, winner of the BBC’s Master Chef in 2012 and author of the book « Sunshine on a Plate », is one of these. She has evolved in the world of gastronomy while remaining true to her Mauritian roots and family values, building a loyal following of thousands of fans around the world. The Constance Culinary Festival recently honoured her by choosing her to be part of its jury. This was an opportunity for us to share with her her impressive professional background, her inspirations and her incredible know-how.

In all simplicity, Shelina describes herself as a fervent ambassador of modern Mauritian cuisine, specialising in gastronomy and street food. « I have always been inspired by my elders, my late Aunt Chandram (my father’s sister) was an amazing cook and made dishes that were always so simple but equally delicious. Also, my mother and sister always cooked around me so I learnt a lot of techniques fromwatching them. Mauritian food reminds me of the food that feeds my soul, I am never really full until I have eaten a Mauritian dish. Born in England to Mauritian parents, Shelina frmly identifes as British Mauritian and wears the local quadricolour at every step of her journey.

Between her job as a chef and her commitment towriting about gastronomy, Shelina Permalloo is also the owner of a restaurant with the equivocal name of LakazMaman. The restaurant specialises inmodernMauritian cuisine, blending traditional recipes withShelina’s culinary ingenuity. « I have taken the traditions of the kitchen and modified themto suit the ingredients I can source in theUK.We have curry, rougaille, and the famousMauritianbol ranverse. Customers are fascinated and they love it. If the name Shelina Permalloo doesn’t ring in your mind with familiarity, @ShelinaCooks will. That’s the title of her Instagram page where the talented chef shares her passion with thousands of foodies around the world. « The page was created to pass on quick and easy recipes to busy and active families, with a focus on Mauritian recipes of course! »

Such success requires a superpower. For Shelina it is the ability to juggle multiple roles and ambitions. « I am a single mother, a businesswoman, a writer and a chef, all of which require diligent planning, » she says. In addition to hard work and determination, the fairy-fngered cook reveals that the most important quality for success is kindness. « I think it’s always important when you run several businesses and have to maintain human contact.
