Mauritius: Constance Festival Culinaire - CULINARY

Representing Germany for one of the coveted prizes: Thomas Wohlfeld (1*) from the Casual Fine Dining Restaurant Handwerk in Hanover. This time, the jury that the participants had to face was no less top class than the combatants, in which Patrick Bertron (2*) from the Relais Bernard Loiseau and Pierre Hermé, among others the winner of the kitchen Oscar Bocuse d'Or 2015 , the Norwegian Orjan Johannessen, sommelier world champion 2000 Olivier Poussier or Laurent Petit (3*) from Les Clos des Sens in Annecy were represented. This year's wine partner: the Rheingau VDP Weingut Balthasar Ress, whose classic Riesling portfolio also includes an excellent range of natural wines. The culinary competitions were framed by top-class gala dinners, presented by the trophy winners of previous years such as Sascha Kemmerer (1*) from the Travel Charme Hotel Ifen, who was allowed to cook in the Barachois - the foating plein-air restaurant of the Prince Maurice - and others a foie gras with pineapple chutney, coconut sorbet and green pepper. Or Deutz-Trophy winner 2022 Masashi Ijichi (1*) from La Cachette in Valance, who was successful with a wine pairing dinner in the Blue Penny Cellar of Constance Belle Mare Plage, Our personal highlight, however, was the 12-hands dinner in the Archipel restaurant at Constance Prince Maurice, to which Thomas Wohlfeld (1*) contributed Madagascan prawns with parsley emulsion and fermented kohlrabi, perfectly accompanied by a Hattesheimer Nussbrunnen GG from Balthasaar Ress. Simple The 2001 Balthasar Ress Spätlese from Rüdesheimer Berg Rottland, which was then poured, was stunning, accompanied by skrei with a coconut emulsion and green curry from the kitchen of Alain Bianchin (1*) in Brussels. Even with the puristic main course of the Australian tenderloin, which the likeable Ricardo Gaspari (1*) from the Ristorante San Brite in Cortina d'Ampezzo served up, the Riesling was, in our opinion, easily able to outperform the Pomerol Clos Beauregard, which was actually intended as an accompaniment.

But Mauritius not only scores points in the high-end segment as a frst-class foodie destination, but also when it comes to streetfoot. The British Telegraph ranks Mauritius' island capital Port Louis among the top 10 street food hotspots worldwide. We wouldn't go that far, but in fact the city offers culinary temptations on practically every street corner.
