Mauritius: the Constance Festival Culinarie – Sarah Scaparone returns in March
The other Michelin chefs involved in the competition are: Alain Bianchin, Maison Alain Bianchin (Belgium); Christopher Haatuft, Lysverket restaurant, Bergen (Norway); Mark Kempson, Kitchen W8, London, (United Kingdom); Romuald Fassenet, Château Mont Joly, Jura (France); Thomas Wohlfeld, Handwerk restaurant, Hanover (Germany). They will compete for the Deutz Trophy and the Bernard Loiseau Trophy : the jury in this case will be composed, among others, of Bérangère Loiseau (Vice-President of Bernard Loiseau), Patrick Bertron (Chef of the 2 Michelin star Relais Bernard Loiseau), Orjan Johanessen (winner of the Bocuse D ' Or in 2015), Laurent Petit (chef of the Clos des Sens, 3 Michelin Stars in France) and by chef Sascha Kemmerer (winner of the Constance Culinary Festival in 2019 and in the star edition of 2022). The Pierre Hermé Trophy dedicated to the world of pastry and with the sponsorship of Valrhona will also be held in parallel . As competitors for the 2023 edition , six great masters of French haute patisserie have been selected who will work in collaboration with as many pastry chefs from six Constance properties to create desserts and appetizing innovations: Jéremy Aspa (Pâtissier trainer at Ecole Valrhona), Jérôme de Oliveira (Maison Jerome de Oliveira), Mathieu Kamm (Pâtisserie Kamm), Pascal Lac (Pâtisseries Lac), Sébastien Bouillet (Chocolatier Bouillet) and Cédric Pernot (Au Fidèle Berger).
