The Constance Culinary Festival returns from 11 to 19 March C reated in 2006, the Constance Culinary Festival (formerly known as the Bernard Loiseau Festival) will be held this year from 11 to 19 March at Prince Maurice and Belle Mare Plage. Two great names in French gastronomy and pastry, Bernard Loiseau and Pierre Hermé, have once again joined forces with the festival for this new edition. The jury will also include Shelina Permalloo (British chef of Mauritian origin, cookbook author and winner of BBC’s Master Chef in 2012) and several other gastronomic icons. Discovering South India through tasty and spicy dishes, eating with your fngers on a banana leaf, are all tasty experiences that Mauritians love. One address that has earned a good reputation for this is « Kot Mamé Ramalingum & Sons ». After its frst restaurant in Pointe aux Sables created in the early 2000s, here is the latest addition to the family, located in Terre Rouge. The establishment offers dishes straight from South India but also typical Mauritian dishes.
As in previous years, the programme includes a series of exciting competitions and events while preserving the essence of the culinary festival. A total of four competitions will be held, including the Deutz Trophy, the Bernard Loiseau Trophy, the Pierre Hermé Trophy and the Art of the Table Trophy.
For the Deutz Trophy and the Bernard Loiseau Trophy, six chefs, all of whom hold a Michelin star, will come from all over Europe to mark the event. Paired with six « Constance Chefs » from Mauritius, the Maldives and Seychelles, they will create culinary masterpieces and compete for the prestigious title of winner during a week of learning, partnership and unique experiences. It will also be an opportunity for them to showcase their skills, know-how and passion while highlighting the local culture and culinary traditions of Mauritius. The jury for both trophies is all the more impressive as it will be joined, apart from Shelina Permalloo, by Bérangère Loiseau (Vice President of Bernard Loiseau), Orjan Johanessen (Winner of the 2015 Bocuse D’or) and several other gastronomic icons.
In addition to the culinary competition, pastry will also be at the heart of the festival with the Pierre Hermé Trophy. The increasingly creative and innovative desserts presented each year promise to make you dream. To mark this part of the competition, Constance Hotels and Resorts is collaborating with the French chocolate brand Valrhona, allowing participants to use the latter for their creations. Chaired by Pierre Hermé himself (Grand Master of sophisticated French pastry and the world’s best pastry chef in 2016), the pastry competition will bring together six leading French pastry chefs who will also work in partnership with pastry chefs from six Constance properties to create sweet and mouth watering innovations. The jury will be made up of pastry chefs Pierre Hermé, Frédéric Cassel (President of the prestigious Relais Desserts Association), as well as Mercotte (famous TV host and food blogger).
