At the Constance Festival Culinaire, the world's best pastry chefs put their skills to the test under tropical conditions. Under the patronage of the “Picasso of Pâtisserie” Pierre Hermé, true chocolate dreams are created in the middle of Mauritius.

For the Constance Festival Culinaire in Mauritius, every square meter of the air-conditioned patisserie in the kitchen of the Hotel Belle Mare Plage is occupied. The windows fog up from humidity and temperature diferences. Twelve people are milling about here, pouring concentrated chocolate , cooking fruity jellies, and meticulously halving fufy sponge cake bases . Six of them are internationally known patisserie greats from Marc Ducobu or Ophélie Bares from France to Lok Hin Yam from Hong Kong to Fabrizio Fiorani from Rome. They coach their selected candidates for two days on their competition pieces and also create a chocolate display piece themselves with ambition and meticulousness . The festival's jury includes patron Pierre Hermé himself.
