Of course, a tour of the château was also on the programme, giving everyone the chance to wander through the various rooms and discover the building’s past and the nineteenth-century Mauritian way of life that the place still manages to preserve. The highlight of the day was undoubtedly the lunch organised by La Table du Château, in partnership with Aqui, featuring a choice of food and wine pairings. The menu, called l’Originel, was a creative celebration of local Mauritian ingredients, offering a unique gastronomic experience, including an amuse-bouche of smoked marlin mousse with passion fruit, and a starter of sea urchin and tuna tartare with a foam of brèdes mouroum (moringa). To better understand the vision behind the event, Mélissa Vatinelle, Leisure & Events Manager for the DDL Group, explains: « The distillery has been associated with the festival for some time, so it made sense to welcome the chefs for the occasion and introduce them to our expertise, our shared values and our high-quality products. The idea was to design an authentic experience around the different pillars of the estate, whether it be the chateau rich in history, the orchard, the distillery and of course the dishes we have on offer. For us, it’s also a great honour to have been able to welcome all these wonderful people to our home and, of course, to contribute to the Constance culinary festival ». For his part, pastry chef Germain Decreton says he is delighted to be discovering this side of the island for the frst time, as well as the estate, which offers a wonderful tour. « We’re also here to choose the rum we’re going to use for the competition, so we can discover the products and choose what’s best for our creations. It’s interesting to get to the heart of what we do daily and to have this relationship between producers and chefs. After that, we also spend time with other people, whether it’s our partners or the other chefs, so it’s all very rewarding, » he says. For Mauritian chef Annaice Moothien, this excursion is her frst visit to the estate, and she is delighted with the place and looking forward to tasting the different rums and other products. The young woman explains that she intends to draw inspiration from the exchanges on-site and hopes to make the most of this experience. So this trip to the heart of the Labourdonnais estate seems to have been a great opportunity to get into the right frame of mind for the start of the festival, while soaking up the beauty of Mauritius and, of course, the entire estate.
